Viviana Espinosa, CEO of Eating by V, talks with us about how switching from multiple payment systems to using just MoonClerk as her sole payment provider helped her almost double her business in 2 months.


Can you tell us a little about what your organization does?

Eating by V is Miami’s highest rated Meal Plan Delivery Service. We prepare fresh, delicious, and healthy meals and deliver them straight to your home three times a week. We offer four different plans and change our menu weekly to offer our clients variety. Whether you are trying to maintain, shred a few pounds, or maybe gain muscle, we got you covered. What are your day-to-day responsibilities?

As the CEO, my day to day responsibilities focus on exposure for the company via events and partnerships, managing all the kitchen staff and drivers, and maintaining my social media. My amazing team handles the rest so I can focus on getting us to our revenue goals!

How did your organization get started?

I’ve always had a passion for cooking. I used to cook for my ex-boyfriend, and when we split up, I felt like I didn’t want that to end. I decided to build Eating By V from the heartbreak I was going through, and with the tremendous support from family, friends, and my community, the company flourished!

What have been some key factors in your organization’s growth?

My journey has definitely not been easy. Having zero business experience and going through a very emotional and difficult separation caused me to make many errors. I have learned the most through my own experiences. Throughout it all I have remained very transparent, and very genuine, capturing and attracting the hearts of many people who believe in me and genuinely want to help me succeed. As an organization, I believe creating systems to automate the important tasks (that don’t contribute to customer growth) was the most important!

What do you use MoonClerk for?

We use MoonClerk to manage our clients’ monthly subscriptions. Before MoonClerk, I was accepting payments using a number of different systems, and it was driving my business to the ground from lack of organization, accountability, and honestly there was a point I felt we couldn’t scale up any further if something didn’t change.

What problems did you have with previous payments systems?

I was accepting payments using Venmo, PayPal, Zelle, Cashapp, and others! It was a huge mess, especially because I couldn’t keep track of when my client’s needed to repay. So, I spent almost all day focusing on that, rather than the important aspects of my business!
